It’s Christmassssss!!!

It’s Friday which means it’s time for another Friday Food! With it only being only 17 sleeps until christmas I repeat 17 SLEEPS UNTIL CHRISTMAS, I’m thinking a nice festive recipe is in order. What better way to kick it off than some festive mince pies?

This recipe is one which is super easy even your overly excited little ones will be able to help, maybe.. Shaniah has the concentration span of a wet lettuce ever since day one of the calendar was opened so she wasn’t up for being creative, she just wants Christmas day to hurry up.

These Mince pies are the perfect dessert. With melt in the mouth pastry that’ll leaving you wanting more they aren’t going to be around for long.

Instructions
  1. Put the Flour and Butter into a bowl and rub together until you get a crumb consistency.
  2. Add in the sugar and the egg and mix together. Tip out onto a lightly floured surface and fold until the pastry comes together.
  3. Wrap the pastry in cling film and and put it in the fridge to chill for around 10 minutes.
  4. Heat the oven to 220ºC/200ºC fan. Roll out the pastry thin about 3mm . Using a round cutter, cut out 16 bases and place them into a cake tray. Fill each with mincemeat and brush the edge of each pie with a little beaten egg.
  5. Re-roll out the pastry and cut out 16 smaller circles/stars for the lids. Press them on top of the bases to seal. Glaze the tops with egg, sprinkle with caster sugar then make little cuts in the top of the pastry.
  6. Bake them in the oven for around 25 minutes or until they go golden. Leave them to cool before removing them from the trays. sprinkle them with icing sugar and serve with cream!
