Life has been super busy for the past few weeks and sticking to a meal plan just wasn’t possible. We started back up last week and I am so proud to say we actually stuck to it, for the first time in what feels like forever!
So like usual, here is a recap on last weeks meals.
Monday: Chilli Con Carne.
Shaniah loves Chilli Con Carne. Whenever I ask Shaniah what she would like to eat each week, she is always asking for this dish. Always. I’m not fussed though, I mean anything that gets her eating is a win in my book. Making last weeks Chilli, I had an incident with the chilli powder – the lid fell off and more powder than I had hoped fell into the dish. I knew that this was going to be hot and I had my suspicions that Shaniah wouldn’t eat it. That really annoyed me as I knew just how much she was looking forward to it.
Dinner done, I served it up. Ryan and myself were constantly sniffing due to the heat of the dish, Shaniah – well she scoffed the lot! In fact, she didn’t even pause to eat the tortilla chips! Note to self: Raise the heat – permanently.
Tuesday: Pork chops, mashed potato and garlicy green beans with mushrooms.
I had Garlicy green beans whilst at Disneyland and it instantly became one of my favourite side dishes. This meal lived up to my expectations and brought me all clean plates! Ryan also hasn’t stopped talking about it – winning!
Wednesday: Hunters Chicken
This is my favourite dish EVER! I will get Shaniah to like it…
Thursday: Roast and all the trimmings.
By all the trimmings I really do mean ALL the trimmings. When the Christmas adverts rock up onto the tv, Ryan cannot help but crave pigs in blankets, I mean I am not complaining! I love them.
Friday: Stew using the left over chicken
This was a flop. I mean, I did beef stew the other week and everyone loved it, chicken… not so much.
I use this recipe by the lovely Annabel Karmel. It’s so easy and tasty. The whole family finished everything on their plates and Ryan, well he went up for seconds!

So that was last weeks round up, here’s to this week:
Monday: Stir fry or Hunters chicken
This depends on what we actually fancy on the day. I have fancied Stir fry for ages but it’s not something that Shaniah likes. Although, now and then she will be open to trying something new, I just hope that Monday is that day!
Shaniah lives for the burger days. Something so easy, yet something that we haven’t had in a while. It has to be done, doesn’t it?
Wednesday: Spaghetti Bolognese
Can you tell I’m being super lazy this week? This is another quick and easy dish that everyone eats.
Thursday: Sausage pasta bake
We love, love, love this meal. Another brilliant dish during the colder months.
Another dish that Shaniah loves! She actually helps me cook this. It’s always nice to have a helping hand.
Saturday: Eating out.
We are going to watch Frozen 2 (eek!) so we are going to grab something out to make the most of this very exciting day.
Sunday: Bangers and Mash.
Simple yet superbly tasty. Obligatory onion gravy also.
