What a week last week was. Shaniah ate everything – absolutely everything. Lunchboxes came home pretty much empty, dinner plates came back to me empty, and she even ate all her puddings. Anyway, like always I will review the past seven meals and share the highs and the lows of each meal.
Let’s start with Monday! Chilli Con Carne with jacket potato and salad. Shaniah was super excited to have this. I knew she would be as she demolishes anything Mexican. Surprise, surprise she has requested it again this week!
Tuesday we had Kebab meat with homemade sweet potato chips and Salad. Again another dish that Shaniah loved, she didn’t eat all the sweet potato chips but that’s okay, I don’t think she had ever tried them before.
We had homemade chicken Tikka Masala with rice on Wednesday. Shaniah loves, and they are one of the dishes that I love to cook, so I was on to a winner.
Thursday we had homemade fish and chips, Shaniah finished this dish so, so quickly! It was crazy.
Chicken burger and chips consumed on Friday, Shaniah ditched the chicken and just ate the bun and everything else, why not?
Saturday we had potato dauphinoise and vegetable medley. Something super quick and easy as Saturdays are always busy days for us.
On Sunday we had Roast pork with THE best crackling. Shaniah didn’t have this; instead, she had a chicken roast with a chicken breast.
Monday: Chicken Supreme. I did this dish a few weeks ago, and we all loved it, it is something so quick and easy which is always a plus.
Tuesday: Enchiladas. Good old Old El Paso. I have never done Enchiladas, however, knowing that it is a Mexican dish, I think everyone will enjoy it, especially Shaniah!
Wednesday: Chilli con Carne. Shaniah has requested this dish yet again. I can see that this week is following some Mexican theme, I didn’t plan it that way, but hey, we will go with it.
Thursday: Chicken and Bacon pasta bake. Again, a dish I did a few weeks ago, Shaniah loved it but didn’t enjoy the pasta, I am hoping she may enjoy the pasta bits this time around?
Friday: Spaghetti Bolognese. I haven’t had this dish for ages, and I am craving a hearty meal that Spaghetti Bolognese is. I found a recipe for this in my Annabel Karmel “My Kitchen Table: 100 family meals” book. It has loads of hidden veggies in it that I hope will encourage Shaniah to eat a few more vegetables.
Saturday: Homemade chicken Fajitas. I cannot wait to try this recipe. Again it’s something so simple and straightforward, yet something that I have just never gotten round to doing.
Sunday: Lasagne. I am starting to get a little bored of the roasts on Sundays, so this week we are going to have lasagne with salad and garlic bread, again something easy yet something so tasty.
