Spring has sprung!
It’s Friday! Which means it is time for another Friday Food. This week has been perfect hasn’t it? We started it off with a BBQ, (yes I am one of those people that grabs the barbecue out as soon as I see the jolly yellow giant in the sky) and ended the week with one of the hottest days in almost 70 years, pretty impressive aye?
With this new found heat my meal plan took a turn, away went the stomach warming Chilli Con Carne and out came the meals that just shout Spring! One of which I am going to share with you today. This Salmon dish was a major hit with everyone… Except Shaniah who doesn’t like fish or greens and unluckily for her that is all this dish consists of!
Salmon Tray Bake
Easy to make, fool proof spring dish.
Pre-heat the oven to 200ºC (fan).
Start by preparing your vegetables. Chop the potatoes in half, cut the broccoli into small florets, chop the spring onion and slice the lemon.
Put the potatoes into a baking tray and add in the olive oil, toss them around then place them in the oven to bake for around 15 minutes.
Remove the tray from the oven and turn the heat down to 160ºC. Time to add in the vegetables. Toss them around in the oil with the potatoes then carefully make two gaps for the Salmon. Be careful as the tray will be hot.
Place some lemon slices on top of the salmon, add a few of the chopped spring onions on top of the Salmon then season with salt and pepper.
Return the tray to the oven and cook for around 20 minutes, until the vegetables are tender and the salmon is cooked through.
