My favourite day of the week in terms of food would have to be Sunday, Simply because of the roast. I am a sucker for a good roast. I don’t care if it is chicken, beef or lamb but pork is a no go!
Roast potatoes and the look of all the different colours as the veg lays on the plate – winning!
We spent one Christmas, a few years ago at my Auntie and Uncle’s house. I am not a lover of Turkey so I went for the Beef. It wasn’t just any old beef however, it was the most tastiest beef you could ever imagine alongside the beef were the crunchiest and fluffiest potatoes you’ll ever taste in your life.
I couldn’t go through life without having that beef again so I asked if I could have the recipe to make it at home. I have it and I am even allowed to share it with you all – How is that for a little win?
If you would like to create the tastiest, juiciest roast beef for and bite into the fluffiest and crunchiest potatoes you’ll ever taste follow the recipe below!
- Pre heat the oven to 180ºC.
- Wrap the beef in tin foil then place in the oven for 1 hour
- While the beef is cooking peel the potatoes and place in the saucepan. Boil for 5 minutes then drain them.
- Place a sheet of parchment paper on a baking tray, lay the potatoes onto the paper and pour over the oil, sprinkle with a little salt then add them to the oven.
- Once you have placed the potatoes into the oven, take the beef out. Open the foil and pour over a glass of red wine - serve yourself a glass too (we won't tell) . Wrap the beef back up and return to the oven for 45 - 60 minutes depending on how well you like your beef cooked.
- Beef and potatoes will be complete at the same time.
- Serve with vegetables, Yorkshire Puddings and a good serving of gravy and you're good to go.
