Friday Food! Mermaid Cupcakes.

It’s that time of the week again! Time to share one of my favourite recipes from the past week. I have noticed that I haven’t shared a sweet treat recipe for a while now, I seem to always be sharing main dish recipes and I vowed to share a bit of each so this week I am going to be sharing a cupcake recipe.

Of course all my recipes are always Toddler approved by my 3 year old and this one is no different. In fact, she designed this one! She is a massive fan of all things princess and mermaid and wanted to create some mermaid cakes, so with that being said we headed to the kitchen to see what we could find.

I decided to do the standard cupcake recipe but also included some Sultanas by Crazy Jack organics to get some fruit in her belly!

Instructions
Cupcakes
  1. Pre-heat the oven to 180c and place 12 cupcake cases into a cupcake tray.
  2. Beat the butter and sugar together using an electric whisk until the mixture is pale and fluffy then whisk in the eggs one at a time.
  3. Add in vanilla and flour and whisk until just combined then spoon the mixture into the cupcake cases.
  4. Bake for 15 minutes until they are golden brown, insert a knife into the middle of each cake and if it comes out clean they are done! Leave them to cool completely.
Buttercream
  1. Whisk the butter until super soft.
  2. Add the icing sugar and vanilla extract whisk together until smooth.
  3. Beat in the milk then stir in the food colouring.
  4. Spoon the buttercream onto the cakes then add loads of different kinds of sprinkles to the top!
  5. Finally, tuck in!
