Chocolate Marble Cupcakes

Ryan absolutely loves eating my sweet treats nearly as much as I love baking them. Ryan is forever taking my bakes in to work for his family!

This week I decided to bake some cupcakes, not only does Ryan like them, everyone in the household does so I made a batch of 12, so there is enough to go around. Little did I know, Ryan would take them all to work and we’d be left with none! Although I did receive a phone call from him whilst he was at work to tell me that he hadn’t ate them all, he handed a couple to the owners of the house he was painting!

I absolutely love making this recipe, it’s just as fun to make as it is to eat. It is super easy to make so little ones can join in if they wish!

Instructions
  1. Pre-heat the oven to 160°C . Line muffin tin with 12 paper cases.
  2. In a bowl, beat the butter and and sugar until its light and fluffy.
  3. Add vanilla and beat in the eggs, one by one. Each with a spoonful of flour.
  4. Fold in the remaining flour, pour half the mixture into another bowl.
  5. Add the cocoa powder and melted milk chocolate to one bowl and 25ml of milk to the other.
  6. Fill each case with a spoonful of each mixture, then swirl with a knife to create a marble effect. Cook for 20 minutes or until you can poke a knife in and it comes out clean.
Buttercream
  1. Beat the butter in a bowl until it is smooth and creamy.
  2. Add in the vanilla then the icing sugar a little at a time and beat after each time.
  3. Once fully combined, divide into 2 bowls
  4. Add melted dark chocolate to one bowl then combine the two mixtures together.
  5. Swirl briefly with a knife to again create a marble effect.
  6. Add the mixture into a piping bag and and pipe out the icing onto the cakes. Then sprinkle a load of chocolate curls on them.
  7. Finally, tuck in!
