Apple and Stilton Pork Chops.

Ryan is a mad fan of cheese. He will have cheese with anything and everything if he could, me on the other hand, I hate any cheese except cheddar and even then I will only eat it grated!

Last week whilst I was pondering over what meals to cook for the following week I remembered a meal that my father used to cook quite often for him and my mum, although it smelt amazing I never really took the plunge to try it but I decided that now was as good of a time as ever and I knew Ryan would be ecstatic to have a meal with cheese!

On the day that I was due to cook the Apple and Stilton pork chops, Ryan phoned me up at lunch time, the same time he does every day to ask me whats for dinner and when I told him that not only am I cooking a meal that I haven’t done before but it also includes Stilton, he suddenly perked up and said he couldn’t wait for dinner.

Deep down, by now I was actually looking forward to it myself. I am not a cheese lover and usually I wouldn’t even give any kind of cheese other than cheddar the time of day but I do believe that the trip down memory lane was what I was looking forward to the most.

Stilton covered pork chops on a bed of new potatoes and apple
Instructions
  1. Pre heat the oven to 200°C.
  2. Partly cook the potatoes in a pan of boiling, slightly salted water for 10 minutes. Once that is done, drain them then set them aside.
  3. Heat the oil and butter in a large frying pan.
  4. Season the chops then place them in the frying pan to brown over a high heat until slightly golden. Place them on a plate.
  5. Add the onion to the frying pan and cook for 10 minutes and then remove and set aside.
  6. Cut the apple into 8 wedges, removing the core. Nestle the wedges in a roasting dish with the potatoes, add in the onions then pour in the cider and vegetable stock. Cook in the oven for 15 minutes until the potatoes are tender.
  7. Add in the chops and return to the oven for a further 10 minutes.
  8. Crumble over the Stilton and return for 3 minutes or until the cheese has melted.
  9. Serve the pork chops on top of the potatoes and enjoy!
